  • 3-4 ripe red bananas (the riper, the better)
  • 1/3 cup melted butter or vegetable oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped nuts (walnuts or pecans work well – Optional)


  1. Preheat the oven to 350degF (175degC). Grease a standard-size loaf pan with butter or cooking spray, setting it aside.
  2. Peel red bananas and use a fork or potato masher to mash them until you achieve an even, puree consistency.
  3. Add the melted butter or vegetable oil to the banana puree and combine thoroughly.
  4. Add granulated sugar, an unbeaten egg, and vanilla extract and mix all of these wet ingredients thoroughly together.
  5. Combine all-purpose flour, baking soda and salt in one separate bowl; at this stage if adding chopped nuts.
  6. Combine the dry and wet ingredients, mixing just until combined. It is crucial not to overmix banana bread as doing so may produce tough loaves.
  7. Pour the batter into an oil-greased loaf pan and spread it out evenly.
  8. Baking the pan for 50-60 minutes or until an inserted toothpick comes out clean from its center.
  9. Once it has been completely baked, allow the red banana bread to sit for approximately 10 minutes in its pan before refrigerating it.
  10. Once removed from its pan after 10 minutes, allow to cool on a wire rack until fully chilled.
